Great Pumpkin Cupcake from Kickass Cupcakes

I love:
– all things carrot cake
– cream cheese frosting
– pumpkin cheesecake (and related things)

Kickass Cupcakes‘ seasonal cupcake, The Great Pumpkin, combines all three of these into one cupcake. Though contrary to what you might think, the cake is not pumpkin. It is a carrot ginger cupcake with golden raisins and walnuts topped with pumpkin cream cheese frosting. Heaven in a cupcake liner.

The cake is very hearty, due to the quantity of shredded carrots, golden raisins, and walnuts packed into such a tiny space, with warm tones of ginger, cinnamon, and nutmeg. The add-ins create a multitude of textures: chewy, sticky, crunchy and soft. The frosting has a hint of pumpkin flavor, enough to notice there’s something other than cream cheese, but subtle enough that if you did not know, it might keep you guessing. The frosting appears even lighter and silkier against the hearty, chunky cake. Two strips of candied orange peel and course-grain sugar garnish the top and provide a finishing element of texture.

If they try to take this one off the menu following the holidays, I might stage a revolt.
